10:00 AM – 10:40 AM

Live Competition 1 – Fish


Apprentices are asked to prepare, cook and present Black Sole, seasonal vegetable, garnish and a suitable sauce

10:40 AM – 11:00 AM

Live Competition 2 – Chicken


Apprentices are asked to cut a chicken for sauté, and prepare, cook and present a chicken dish with seasonal vegetable, garnish and a suitable sauce

11:40 AM – 12:00 PM

Live Competition 3 – Risotto


Apprentices are asked to prepare, cook and present classic Risotto Milanese

Live Competition 4 – Steak


Apprentices are asked to prepare, cook and present a fillet of beef, seasonal vegetable, garnish and a suitable sauce

2:00 PM – 2:40 PM

Live Competition 5 – Pastry


Apprentices are asked to prepare, cook and present Iles Flottante (floating islands)

10:00 AM – 3:00 PM

Display Competitions


Apprentices are asked to prepare, present and display Fish Terrine, Meat Terrine, Canapes, Macarons, Petit Fours, Centrepiece Cakes from 10am to 3pm

3:30 PM – 4:15 PM
